    Brie snack in two minutes

    One of things I love about cheese is that it is fast food. In the good sense of the word. Because in a few moments you can create a magical serving (just remember to take out the moulded cheeses from the fridge in advance).

    If if if… there can be many occasions where this snack is the perfect thing.

    When I last made these snacks, we had guests in the house. Therefore, I didn’t measure the ingredients, but I am sure you can find your own way anyway… 🙂

    ingredients

    • Pomegranate, the seeds from
    • Honey
    • Bread
    • Fresh rosemary
    • Brie
    • Balsamico glace

    Method

    • Mix pomegranate with a bit of honey.
    • Toast the bread slices in the oven (200°C / 390°F for 5-7 minutes. Let them cool.
    • Place slices of brie on the bread, top with pomegranate og sprinkle with rosemary and balsamico glace.
    • Enjoy! (You can also serve the pomegranate in a small bowl beside the brie snacks.)

    Baked camembert is an easy way to make your own fondue. You can use a cheese baker – or find another small ovenproof bowl.

    It is the season of mont d’or AOP – but you can also bake other cheeses. Maybe you have already done it this year? A camembert is (also) perfect to enjoy melted. Below is my recipe – you can of course also make your own experiments.

    BAKED CAMEMBERT WITH NUTS AND CRANEBERRIES

    ingredients

    • 1 camembert (250 g / 8.8 oz)
    • 50 g / 1.8 oz of mixed nuts and dry fruits (such as walnuts, hazelnuts, pistacho nuts and craneberries), roughly chopped
    • 3 tbsp fig jam
    • fresh thyme, the leafs from

    method

    • Preheat the oven to 180°C / 360°F
    • Unwrap the camembert. Scratch the surface with a knife and place the cheese in your cheese baker / oven proof bowl.
    • Mix nuts and berries with the jam in another bowl. Put on top of the cheese and sprinkle with thyme leaves.
    • Bake in the oven for around 15 minutes.
    • Serve with bread, steamed broccoli, carrot sticks etc.

    Have you ever wondered why some cheddar cheeses are white and others are red? Well, I have 🙂 and of course there is an interesting story behind which takes us 400 years back in time…

    But first things first. What is the colour actually? It is the natural colouring agent annatto which is made out of seeds from a small tree originating from South and Central America. The name of the tree is bixa orellana and it has big beautiful red flowers. You extract the powerful colour from the seeds. Through out the years, man has used the colour to dive clothes, butter and cheese…

    Cheating the cheese better

    Around the 16th century in Britain, people agreed upon that a quality cheese was dark yellow or even light orange. Maybe it began from the fact that the best cheese makers used milk from cows grassing outside during summer, a milk which naturally was full of Beta Carotene. A colour which was intensified as the milk was turning into cheese. It could also be that the best cheese makers at that time used the full fat morning milk which was mixed with the cream from the evening milk the day before.

    Regardless of the reason, a cheese with a dark colour could be sold at a higher price….

    The habit of using a colouring agent in the cheese production spread, and today we see it in cheddar (some of them), double glouchester and red leicester (the two last cheeses are British traditional regional cheeses).
